What the Number Is Paying For
Custom cabinetry is not a catalog cabinet with a better price tag on it. The Bureau of Labor Statistics draws the line inside its own description of the trade: most kitchen cabinets are mass produced, while other products are custom made from architectural designs and drawings. Yours is in the second group.
Most of what you are paying for is time. A run gets measured in your house and drawn box by box. Machines are then set up for widths no catalog carries, parts are cut and assembled, and the whole thing is sanded, stained and coated. None of that happens before your order exists, so none of it is spread across a run of two hundred identical boxes.
The same description carries a word worth stopping on. It says cabinetmakers sometimes see a project all the way through to installation. Sometimes. The build and the install are two different jobs in this trade, and whether one number covers both is the first thing to pin down.
The Lines That Move Between Quotes
